Buttermilk Drop Biscuits

It happened. The leftover blackberry jam just called to me from the fridge. Fresh jam with nothing to spread it on is a tragedy. Now, I’m not above just eating that jam with a spoon, but the idea of spreading that gooey goodness all over a fresh, warm, buttery biscuit is absolute heaven. But who has the time to roll out and cut traditional biscuits? OK, not really all that hard, but the clean-up was a bit more than I really wanted to deal with today. Enter the idea of drop biscuits.

My mom always had a box of Bisquick in the cupboard for such occasions. I’m not sure I remember us doing them that often for breakfast, but she’d often mix in a little cheese for an easy dinner biscuit. Boom. Warm, delicious biscuits in no time flat. So good. However, as I got older and snobbier about my baked goods, I decided that Bisquick has a particular taste that is distinctive and a bit salty. I happened to have buttermilk on hand, but this recipe even gives you several cheats to make a quick substitute if you don’t have any. And let’s be honest, when you want a biscuit, you want it RIGHT NOW, not after you run to a store, so that info is super helpful!

My favorite thing about this recipe is the step where you pour the the cold buttermilk into the melted butter, stir it up, and get these globules of butter that, according to the OP, “melt, creating steam which results in a flaky, tender biscuit.” Sometimes, these methods don’t always work the way they do on the blog you’re reading, but this one sure delivered. Also, watching that reaction was incredibly satisfying.

I tried my hardest to follow the recipe as far as size was concerned, but I guess I just wanted a bigger biscuit. It’s always so hard to judge. My one 1/4 cup measuring cup, which the original poster suggested to measure, was still in the sink from yesterday’s venture, so I eyeballed it. I got eight. I was happy with eight. They still baked beautifully, though I feel as if my oven runs a bit hot. We rent our house, so the oven is old. I need to buy an oven thermometer and try to figure out the variance. Stop me if I’m dwelling too much on the minutia. Oh, I’m doing that? Ok. Point taken.

Biscuits!!!! Oh, they were so delicious. Right out of the oven, I brushed them with some butter and piled two on a plate with the blackberry jam. Filled my cup with coffee, and polished those bad boys off before my baby’s nap time was over. The rest went great with the Chicken Noodle Soup I made for dinner that night in the Instant Pot! This recipe is definitely a keeper!
